The flank steak comes from the abdomen or lower chest of the cow. Given its deep flavor and texture, it can be prepared in a variety of ways:
-Coat with a dry rub (garlic, chili powder, paprika) and sear for a couple minutes on each side.
-Slice into thin strips and toss with vegetables and soy sauce to make a flavorful stir-fry.
-Braise low and slow in a rich tomato-based sauce.
