Slice off the pockets of fat and gristle before cooking this organ meat. Beef heart is enjoyed quickly seared in cast-iron after seasoning with salt. Rest for a few minutes and serve medium-rare. Serve with pesto or a compound butter of softened butter, chopped garlic and parsley.
