Crispy Pork Belly
Since pork belly is mostly fat, technique is important with cooking it. You want to end up with a crispy outside and a juicy, tender, melt-on-your-tongue inside. Pork belly is surprisingly easy to make. Here’s a simple recipe that will give you excellent results.

*Start this recipe 3 days before you plan to serve. Long chilling time is key. It will be worth the wait.

1 - Season pork belly with salt, sugar, and pepper. Refrigerate uncovered overnight.

2 - Preheat oven to 450F.

3 - Roast pork belly in the oven in a skillet, fat side up, for 30 minutes. Reduce heat to 275F and roast for an hour.

4 - Remove from oven and let cool to room temperature. Wrap in parchment paper and refrigerate until chilled through, at least overnight and up to 2 days.

5 - Once chilled, slice into thick pieces and brown until crispy.

Serve over salad, soup, or pasta.
